The winemaking tradition has been passed down from father to son since 1632. Francois Carillon himself is the 16th generation of the family vignerons and has crafted some of the best white wines across Puligny Montrachet, Chassagne Montrachet and Saint Aubin. Domaine Geantet Pansiot was founded in 1954, started with three hectares, expanded to date to cover 13 hectares of vines up to 80 years old, spreading through different appellations: Gevrey Chambertin, Marsannay, Chambolle Musigny and Charmes Chambertin. The 3rd and 4th generation, Vincent and Fabien Geantet have been working hand in hand, practicing lutte raisonee (no herbicides or chemical fertilizers). Domaine Genot Boulanger is a rising family estate which has been rejuvenated by the 4th generation vignerons Aude and Guillaume Lavollee since 2008. Drastic re-organization and a re-direction to organic farming have produced a huge step up in the quality of the estate's wines; and they are certainly a name to know. Genot Boulanger is best known for its remarkable Mercurey, Meursault, Puligny, and Chassagne. And according to Robert Parker, their reds “can best be described as full-throttle.….lovers of Chateauneuf-du-Pape will find them immensely appealing.”
Domaine Henri Rebourseau may be one of the next biggest names to watch for. Behind the Domaine is the notable Bouygues family, who also owns Chateau Montrose. Rebourseau employs only traditional cultivation methods, combining 100% organic winegrowing with biodynamic practices. The Rebourseau wines are great to drink and to hold. Back in the 1930s, It was already on the list of top wines along with the best producers, including Domaine de la Romanee Conti, the most expensive Burgundy wine in the world.
Domaine Heresztyn-Mazzini, founded in 2012 by Florence Heresztyn and Simon Mazzini, is a distinguished estate in Gevrey-Chambertin, Burgundy, producing 14 cuvees across 5.5 hectares of prestigious terroirs. Domaine Nicolas Gauffroy is a family-run estate located in Meursault, Burgundy, with roots dating back to 1932. Now in its third generation, Nicolas Gauffroy has led the 12-hectare domaine since 2013, combining his father’s traditional Burgundian expertise with fresh insights gained from internships across France. The estate is known for its hands-on approach, managing every stage from vineyard to bottling, and for its commitment to preserving the typicity of its terroirs. Domaine Parent was founded in 1803. Today, it is headed by two sisters, Anne and Catherine Parent, who continue the family tradition of winegrowers that originated in the 17th century. The vineyards are all treated organically, and the harvest is undertaken by hand. After rigorous sorting, the grape bunches are destemmed, followed by whole-berry temperature-controlled fermentation follows (12-20 days). The wines are aged for 16-18 months with 30-60% new French oak. Their wines are very often highly rated by Allen Meadows, who describes them as "rich", "supple", "expressive" and "persistent".

This family-owned winery is run by Gilles who is the 4th generation of Remoriquets, also being the President of Burgundy's foremost growers' association, Confederation des Associations Viticoles de Bourgogne, and also the Chairman of the BIVB (Bureau Interprofessionnel des Vins de Bourgogne) 's Technics and Quality Committee. Gilles makes a fine range of wines, mostly from Nuits St Georges, which are finely structured and have great ageability.
